While these videos don't explain the motions they are going though, you can still glean a lot of information by watching an analyzing good form.
This is a really educational video series on laser sailing. It goes over nearly all aspects of dinghy sailing. All of the fundamentals he talks about are applicable to CFJ sailing.
Here is a really good website that steps through pretty much all knots you will need as a sailor. Pay particular attention to the bowline, cleat hitch, figure 8 knot, and the sheet bend. If you navigate around the page a bit, look at the slip knot and how to coil an unattached rope.

This is a really nice guide that covers most all of the basics. It also has a ton of pictures and diagrams to help visualize the concepts it is explaining.
Adventist Youth Honors Answer Book/Recreation/Sailing
This source is excellent for absolute beginners. It covers right of way, tacking and jibing, basic knots, righting a capsized boat, and parts of a boat. It lays out all concepts neatly and it has plenty of visual aids. I'd recommend it to complete newbies and those looking to reinforce their basic understanding of dinghy sailing.
This is a great guide for racing lasers and CFJs. It covers all aspects of the race from the start to mark roundings, beating upwind and running downwind, and basic strategy to rudimentary sail theory. It's a great read and incredibly informative to those who know how to sail, but want to sail faster. I'd recommend it to everyone as soon as you have a firm grasp on the basics.

This manual is pretty comprehensive team racing overview. It covers everything in depth, but it lacks diagrams which would help the novice team racer.
